recommendations among the chefs at the finest hotels and restaurants. We developed
our trimmed, ready to use shiitake caps for the food service industry. There
are no stems, no waste and no losses. The extra care we take to grow our
mushrooms without chemicals results in superior flavor, aroma and texture. They
don't fall apart when cooked. Because our shiitakes have a more intense,
clean shiitake flavor you can use less in a recipe and still have the same
flavor impact. You will see the results in lower food costs. Our shiitakes are
firm, but never tough. You can slice them more thinly, even julienne them. One
of our customers, Chef Jermaine Brown of Abacus, recently won first place in
the chef's competition which is part of the Dallas Wine and Food Festival with
a recipe using our

We grow our shiitakes indoors in environmentally
controlled growing rooms where they are protected from pests and chemicals in
the environment. But most importantly we grow them organically. We pick our
shiitakes throughout the day, seven days a week so that they are picked at the
peak of freshness and flavor. By carefully monitoring the growing conditions we
are able to grow our shiitakes year around.

growth stimulants or animal by-products. Because our shiitakes are grown
organically you do not have to worry about residues of toxic chemicals. Our
shiitakes are certified organic by the Texas Dept. of Agriculture which follows
the USDA standards. That means you do not have to worry about the problems that
have been associated with imported shiitakes - sulphites and other
chemicals which are not permitted in the

also the health and safety of your customers.
There
have been reported cases of anaphylactic shock as a result of

PhD of the Guthrie Research Institute wrote, "It is
highly recommended that food handlers do not wear latex gloves".
The
American Academy of Family Physicians lists "food handled with
powdered latex gloves" as a cause of allergic reactions and recommends
that non-latex gloves be used in food preparation.

only sell shiitakes that we have grown ourselves. We never re-pack or buy from
other growers.

What to look for in judging shiitakes: The caps
should be firm and clean, tan or fawn in color with no dirt, no black, purplish
or wet spots. Turn the caps over and look at the gills. The gills should be a
creamy white. They should have a clean, nutty, shiitake fragrance. A sour,
acrid, moldy or blue cheese type of odor can indicate bacterial contamination
as can a sticky or slimy surface. When you cook them you should smell only the
nutty, shiitake fragrance. There should be no metallic, chemical or
formaldehyde type of odor.
Shiitake mushrooms are suitable for special diets.
Most cultivated mushrooms such as button, white and portobellas
are grown on substrates of straw and poultry or other manures. Our mushrooms
are grown on sterilized hardwood sawdust with no animal products or
by-products.
Shiitakes are 18% protein. They are a good source of
B vitamins and contain all the essential amino acids.
Shiitake mushrooms contain interferon, beta glucans and have long been recognized in Asian medicine for
their ability to enhance the immune system and as a general tonic. In western
medicine various extracts of shiitakes, most recently AHCC , have been used to treat cancer, HIV,
Chronic Fatigue Syndrome and other diseases. David Williams, M.D. calls AHCC "Cancer's natural enemy
